BAKED KALE FRITTATA
Ingredients:
3 cups kale
1/2 cup onion
2 teaspoons vegetable oil
1/4 cup water
6 eggs
1/2 cup low-fat milk
1/2 cup cheddar cheese
1/2 teaspoon salt
1/4 teaspoon pepper
Directions:
1. Preheat oven to 375 degrees F. Lightly oil 9-inch baking pan.
2. Wash kale; remove tough stems and chop.
3. Peel and chop onion.
4. Heat oil in skillet on medium-high heat. Sauté onion 3-5 minutes.
5. Stir in kale and water. Cover and simmer 5 minutes. Remove pan from heat and allow mixture to cool.
6. Combine eggs, milk, cheese, salt, and pepper in mixing bowl; stir well.
7. Add kale to egg mixture; stir well. Pour into pan.
8. Bake 20 minutes, or until knife inserted in center comes out clean.
9. Remove from oven and let set 2-3 minutes. Slice into 6 wedges.
