Beef Stew

Beef Stew

Ingredients:

1 ½ – 2 pounds beef stew meat (about 3 cups diced)
¼ cup flour
¼ teaspoon pepper
vegetable spray or oil
2 medium onions, quartered
1 stalk celery, cut into pieces
6 cups water
4 potatoes, peeled and quartered
4 carrots, cut into pieces
2 tablespoons flour
¼ cup water

Directions:

  1. In a large bowl or a clean, plastic bag, coat beef cubes with flour, salt (optional) and pepper mixture.
  2. Spray large pot with vegetable spray or coat with one tablespoon vegetable oil.
  3. Brown meat in the large pot.
  4. Add onion, celery, and water.  Simmer covered, 1 ½ hours or until meat is tender.
  5. Wash and cut potatoes into quarters.  Wash and slice carrots.  Add to the large pot.  Cover; continue cooking until vegetables are tender, 30 – 45 minutes.
  6. Combine 2 tablespoons flour with ¼ cup water, stir into stew juices.  Heat mixture until it thickens and boils; stirring constantly.
