Beautiful Beet Pesto
Ingredients:
4 medium beets with greens
1 medium onion, chopped
2-3 mild banana peppers, chopped
2 garlic cloves
1 cup walnuts
1/3 cup virgin olive oil
¼ cup Parmesan/Romano cheese (optional)
Directions:
- Wash, trim beet stems leaving at least 1 inch, and cook till tender. When cooked, remove skins under cool water, and set aside.
- Wash and dry beet leaves and chop.
- Cook onions, peppers, and garlic in the olive oil in a skillet over medium heat.
- Add beet greens and cook about 6 – 7 minutes.
- Cut beets into large chunks, place in a food processor or blender, add sautéed ingredients, walnuts, and optional cheese, and process until smooth.
- Season with salt and pepper as desired.
- Makes about 2 cups.
