Beet Pesto

Beautiful Beet Pesto

Ingredients:
4 medium beets with greens
1 medium onion, chopped
2-3 mild banana peppers, chopped
2 garlic cloves
1 cup walnuts
1/3 cup virgin olive oil
¼ cup Parmesan/Romano cheese (optional)

Directions:

  1. Wash, trim beet stems leaving at least 1 inch, and cook till tender.  When cooked, remove skins under cool water, and set aside.
  2. Wash and dry beet leaves and chop.
  3. Cook onions, peppers, and garlic in the olive oil in a skillet over medium heat.
  4. Add beet greens and cook about 6 – 7 minutes.
  5. Cut beets into large chunks, place in a food processor or blender, add sautéed ingredients, walnuts, and optional cheese, and process until smooth.
  6. Season with salt and pepper as desired.
  7. Makes about 2 cups.
