Broccoli and Cannelini Bean Salad

BROCCOLI AND CANNELLINI BEAN SALAD

Ingredients:

4 cups broccoli florets

4 cups kale, chopped

2 tablespoons minced garlic

1/4 cup sun dried tomatoes, chopped

15 ounce cannellini beans, canned

2 tablespoons red wine vinegar

2 teaspoons oregano

1/2 teaspoon black pepper

2 teaspoons extra virgin olive oil

1/2 cup onion, sliced

Directions:

1.  Heat oil in skillet.  Add broccoli, onion, and garlic.  Cook until broccoli is tender.

2.  Add rest of ingredients and cook until kale is slightly wilted.

Serves 6
