Broccoli Cheese Soup

Ingredients:

¼ cup butter
¼ cup flour
¼ cup chopped onions
½ teaspoon salt
1/8 teaspoon pepper
2 cups whole milk
1 cup grated cheese
4 ounces (1/2 cup) chicken broth OR
4 ounces (1/2 cup) water plus one
chicken bouillon cube
1½ cups frozen chopped broccoli

Directions:

1.  Melt butter in saucepan; add onion and cook until onion is soft.
2.  Stir in flour, salt and pepper.
3.  Add milk and cook over low heat, stirring constantly, until sauce thickens.
4.  Add cheese and stir until melted.
5.  Add chicken broth and broccoli and heat to serving temperature.

Makes 6 servings.
