Broccoli Pesto

BROCCOLI PESTO

Ingredients:

1 cup chopped broccoli florets
2-3 cloves garlic
½ cup pine nuts or walnuts
2 Tablespoons lemon juice
¼ cup grated Parmesan/Romano cheese
¼ cup virgin olive oil

Directions:

  1. Combine all ingredients in a food processor or blender and process until evenly blended.
  2. Season with salt and pepper as desired.
  3. Makes about 1 cup.
