Carrot and Apple Compote

CARROT AND APPLE COMPOTE (OR SAUCE)

Ingredients:

1 pound carrots, peeled and cut into inch long diagonal slices (or package of  prepared baby carrots)

1 can apple pie filling, lower sugar

2 apples, peeled and sliced

Directions:

1.  Steam carrots until they are tender.

2.  Drain the carrots.  Add pie filling and apples to carrots.

3.  Heat and stir until pie filling is hot and apples are tender.

Serves 8, 1/2 cup each.

NOTE:  For sauce, add 1/4 – 1/3 cup orange juice and heat through.
