Carrots Au Gratin

Ingredients:

2 tablespoons butter
6 saltine crackers, crushed
2 tablespoons Parmesan cheese, grated
1/8 teaspoon black pepper
5 carrots, sliced
¼ cup sweet green bell pepper, chopped
3 tablespoons onion, chopped

Directions:

  1. In a small bowl, toss melted butter with cracker crumbs, Parmesan cheese, and the pepper; set aside.
  2. Cook carrots, green pepper, and onion in salted boiling water just until tender.  Drain.
  3. Top carrots au gratin with buttered crumbs.
