Chicken Cacciatore
Ingredients:
2 boneless skinless chicken breasts cut into 2 or 3 pieces per breast
1 green pepper cut into large pieces
1 medium onion cut into large pieces
6 oz. mushrooms cut into large pieces
2 garlic cloves, minced
1 28-oz. jar low sodium spaghetti sauce
1 teaspoon olive or canola oil
1 cup uncooked pasta – rotini, fusili, small shells, etc.
Directions:
- In heavy frying pan, sauté chicken pieces briefly until lightly browned.
- Add spaghetti sauce and bring to a low boil.
- Add onion, pepper, garlic, and simmer until vegetables and chicken are done.
- Add pasta and simmer until soft. Additional water or tomato sauce could be added if necessary for more liquid.
- Season with pepper if desired. Add seasonings such as oregano, basil, and fennel as desired.
