Chicken Cacciatore

Ingredients:

2 boneless skinless chicken breasts cut into 2 or 3 pieces per breast
1 green pepper cut into large pieces
1 medium onion cut into large pieces
6 oz. mushrooms cut into large pieces
2 garlic cloves, minced
1 28-oz. jar low sodium spaghetti sauce
1 teaspoon olive or canola oil
1 cup uncooked pasta – rotini, fusili, small shells, etc.

Directions:

  1. In heavy frying pan, sauté chicken pieces briefly until lightly browned.
  2. Add spaghetti sauce and bring to a low boil.
  3. Add onion, pepper, garlic, and simmer until vegetables and chicken are done.
  4. Add pasta and simmer until soft.  Additional water or tomato sauce could be added if necessary for more liquid.
  5. Season with pepper if desired.  Add seasonings such as oregano, basil, and fennel as desired.
