Chinese Vegetable Stir Fry
Ingredients:
8 ounces firm tofu, cubed 1- 10 oz. package sugar/snow peas
2 cloves garlic, sliced thin 2 tbsp. brown sugar
2 tbsp. vegetable salad 2 tbsp. sesame oil
2 yellow onions, peeled & chopped 4 tbsp. light soy sauce
8 stalks celery, chopped 5 oz. fresh spinach
10 mushrooms, chopped
Directions:
- In a hot frying pan or wok, sauté the cubed tofu with the garlic in the vegetable oil. Remove and set aside.
- Add the onions and cook one minute.
- Add the celery and cook for two to three minutes.
- Add the mushrooms and peas. Cook on high heat until all is hot, about five minutes, stirring very often.
- Mix the brown sugar with the sesame oil and soy sauce. Add to the pan and mix to coat thoroughly. Stir in cooked tofu and spinach, stirring until spinach is wilted.
*Serve as a side vegetable or over rice.
*Serves 8 as a side vegetable.
