Citrus Salsa

Ingredients

4 Roma (plum) tomatoes

2 large oranges, peeled, sectioned, and diced

½ large sweet onion, chopped

1 large jalapeño chili, seeded and minced

2 tbsp. fresh lime juice

3 packets Splenda or 3 tsp. sugar

1 tbsp. fresh cilantro, chopped

½ tsp. salt

Directions

  1. Fill medium saucepan with water.  Bring to a boil.  Blanch tomatoes for about 1 minute (until skins crack) in a pot of boiling water.  Remove tomatoes and set aside to cool.
  2. Place remaining ingredients in a bowl and combine thoroughly.
  3. When tomatoes are cool enough to handle, peel, dice, and add them to citrus mixture, stirring thoroughly.
  4. Serve immediately or refrigerate for later use.
  5. Makes 15 ¼ cup servings
