Citrus Salsa
Ingredients
4 Roma (plum) tomatoes
2 large oranges, peeled, sectioned, and diced
½ large sweet onion, chopped
1 large jalapeño chili, seeded and minced
2 tbsp. fresh lime juice
3 packets Splenda or 3 tsp. sugar
1 tbsp. fresh cilantro, chopped
½ tsp. salt
Directions
- Fill medium saucepan with water. Bring to a boil. Blanch tomatoes for about 1 minute (until skins crack) in a pot of boiling water. Remove tomatoes and set aside to cool.
- Place remaining ingredients in a bowl and combine thoroughly.
- When tomatoes are cool enough to handle, peel, dice, and add them to citrus mixture, stirring thoroughly.
- Serve immediately or refrigerate for later use.
- Makes 15 ¼ cup servings
