Cooked Salsa

Ingredients

6 fresh ripe tomatoes

1 tablespoon ground cumin

1 teaspoon ground coriander

¼ teaspoon cayenne pepper

½ teaspoon dried or 1 ½ tsp. finely chopped fresh oregano

½ teaspoon dried basil or 2 tsp. finely chopped fresh basil

3 tablespoons canola or olive oil

1 onion, finely chopped

4 cloves of garlic, finely chopped

¼ teaspoon salt

2 green peppers, finely chopped

Directions

  1. Finely chop the tomatoes.
  2. In a medium-size frying pan, heat the oil.  Add the onion and garlic and sauté for 3-4 minutes.  Reduce the heat and add the spices.  Sauté for 1 minute to enhance the flavors, stirring constantly.
  3. Add the tomatoes and simmer for 10 minutes.  Add the salt and green peppers and simmer for 10 minutes more.
  4. Taste and adjust seasonings.  If you like hotter salsa, add more cayenne.
  5. Makes 12 ¼ cup servings.
