Corny Tomato Salad

CORNY TOMATO SALAD

Ingredients

2 tablespoons lemon juice                     ¼ teaspoon black pepper

1 teaspoon salt                                    ¼ cup vegetable oil

½ teaspoon chopped, fresh oregano       4 tomatoes, diced

2 cloves garlic, minced                         2 small green peppers, chopped

½ teaspoon chili powder                       1 cup thinly sliced green onions

¼ teaspoon ground cumin                      3 cups corn kernels

Directions

  1. Whisk together juice, salt, oregano, garlic, chili powder, cumin, pepper, and oil in medium bowl.
  2. Add tomatoes, peppers, onions, and corn; toss.
  3. Marinate at room temperature 1 hour or several hours in the refrigerator.
  4. Serves 8.
