CUCUMBER MELON SALAD
Ingredients:
2 cucumbers
2 cups cantaloupe, sliced
1/2 teaspoon salt
1/4 cup mayonnaise, fat free
1/2 cup sour cream, light
1/2 teaspoon dill weed, dried or 2 teaspoons fresh chopped
1 teaspoon sugar
1/2 teaspoon lemon juice
Directions:
1. Partially peel cucumbers. Slice thin and place in bowl sprinkled with salt. Let stand 30 minutes.
2. Combine rest of ingredients except melon. Set aside.
3. Squeeze liquid out of cucumbers and mix with melon.
4. Toss all with cream dressing. Serve chilled.
