Date Apple Slaw
Ingredients:
¼ small white cabbage
¼ small red cabbage
¼ small cabbage head
1 cup dried stoned (pitted) dates
3 eating apples
Juice of 1 lemon
2 teaspoons caraway seeds
For the dressing:
4 tablespoons olive oil
1 tablespoon cider vinegar
1 teaspoon clear honey
Salt and ground black pepper
Directions:
- Remove the central core from the cabbage quarters as well as any coarse outside leaves and the central rib from the larger remaining leaves, then finely shred them and place shredded cabbage in a large salad bowl.
- Chop the dates and add them to the cabbage mixture.
- Core the eating apples and slice them thinly into a mixing bowl. Add the lemon juice and toss together to prevent discoloration before adding them to the salad bowl.
- To make the dressing, combine the oil, vinegar and honey in a screw-top jar. Add salt and pepper then close the jar tightly and shake well. Pour the dressing over the salad, toss lightly, then sprinkle with the caraway seeds and toss again.
