Dilled Barley & Corn Salad
Ingredients:

2 teaspoons olive oil
1 tablespoon white vinegar
2 teaspoons Dijon mustard
2 cups cooked barley
1 cup corn kernels
¼ cup red radishes, sliced
½ cucumber, chopped
1 red pepper, chopped
3 tablespoons fresh dill, chopped
2 tablespoons shallots, chopped
Directions:
- Mix all vegetables and barley.
- Combine dressing ingredients.
- Toss all together.
