French Toast Melba Casserole Recipe

FRENCH TOAST MELBA CASSEROLE

Ingredients:

6 slices whole wheat bread

8 ounce cream cheese, fat free

4 eggs

2/3 cup fat free half and half

3 tablespoons brown sugar

1 teaspoon vanilla

1 1/2 cup peaches, sliced (2 peaches)

3/4 cup raspberries (1 pint)

1/4 teaspoon nutmeg

Directions:

1.  Slice bread crosswise into triangles.  Overlap in 9” x 13” baking dish, lightly greased.

2.  Place peach slices over bread.

3.  Beat eggs, cream cheese, cream, vanilla and brown sugar until smooth.  Pour over bread and peaches.

4.  Bake uncovered, at 400 degrees, for 25 minutes.

5.  Top with raspberries and sprinkle with nutmeg.  Bake another 10-15 minutes until done in center.

6.  Dust with confectioners’ sugar before serving.

7.  Cut into 6 pieces.

Serves 6

NOTE:  Peaches can be substituted with pears; blueberries can be used instead of raspberries.
