Fresh Homemade Salsa

Fresh Salsa

Ingredients:

4 large tomatoes, peeled

1 large green pepper, coarsely chopped

3 tablespoons onion

1 clove garlic

2 teaspoons lemon juice

1 jalapeno pepper, cut into chunks (more or less to taste)

1 tablespoon cilantro or fresh parsley, chopped

¼ teaspoon salt

1/8 teaspoon black pepper

Directions:

  1. Place tomatoes, green pepper, onion, garlic, lemon juice, and hot pepper in a food processor.  Process until desired consistency using pulse button.
  2. Add lemon juice, salt and pepper. Taste, adjust seasonings.
  3. Serve.

Makes 16 ¼ cup servings.
