Green Beans w/Lemon Vinaigrette Recipe

GREEN BEANS WITH LEMON VINAIGRETTE

Ingredients:

2 teaspoons parsley, chopped

2 tablespoons lemon juice

1 tablespoon plain yogurt, lowfat

2 teaspoons chives, chopped

1/4 teaspoon salt

1/4 teaspoon black pepper

2 1/2 tablespoons olive oil

4 cups green beans

1/2 cup red bell peppers, sliced

Directions:

1.  Combine parsley, lemon juice, yogurt, salt, pepper, and oil in a jar.  Cover and shake vigorously.  Chill.

2.  Place green beans in boiling water for 5 minutes.  Drain.  Cover with cold water for 1 minute.  Drain.

3.  Toss beans and red peppers with vinaigrette.

Serves 6
