Green Puree

Ingredients:

2 cups raw baby spinach leaves (or 1 cup frozen chopped spinach,

or frozen chopped collard greens)

2 cups broccoli florets, fresh or frozen

1 cup sweet green peas, frozen

1 teaspoon fresh lemon juice

3-4 tablespoons water

Directions:

  1. If using raw spinach, thoroughly wash it, even if the package says “prewashed”.
  2. Using a vegetable steamer, steam broccoli and spinach (or collards) in 2 inches of water in a tightly covered pot for about 10 minutes.
  3. Add the frozen peas for the last minute of steaming.

OR: (1-3) Place broccoli, spinach (or collards) in a microwave-safe bowl, cover with water, and microwave on high for 8 to 10 minutes until very tender, adding the frozen peas for the last minute of cooking.

  1. Once cooked, drain the vegetables and place them in the bowl of your food processor along with 2 tablespoons of water and lemon juice.
  2. Puree on high until as smooth as possible.  Stop occasionally and push contents from the top to the bottom.
  3. If necessary, add the rest of the water to make a smoother puree.
  4. Makes about 2 cups of puree.  Double this recipe if you want to store an extra cup.  Store in refrigerator up to 3 days, or freeze ¼ cup portions in sealed plastic bags or small plastic containers.

Makes 2 cups.

Broccoli is nutrient dense with fiber, protein and Vitamin C, as well as being one of the best vegetable sources of calcium.  The antioxidants in it boost immunity against colds, flu, heart disease and cancers.

Green peas contain lots of fiber, Vitamin C, potassium and Vitamin K.  They help fight colds, and the Vitamin K helps to strengthen bones.  One cup of peas has more protein than one large egg.
