2 lbs. dandelion greens
3 T. olive oil
1 clove of garlic, chopped
salt and pepper

Discard wilted leaves.  Wash leaves several times in cold water and cut off the roots.  Heat oil. Remove pan from heat and saute garlic in hot oil for one minute.  Add the washed greens and seasonings.  Cover the pan and cook slowly 10-12 minutes until tender.  If the pan becomes too dry add a couple tablespoons of water.
