1 lb. leafy green vegetable
salt
2 tbs. olive oil
2 cloves of garlic chopped
1 small dried red chile cut into pieces or 1/2 tsp. chile flake

Pick over greens and rinse well.  Bring a large pot of water to a rapid boil.  Add 1 tbs. salt and the greens and boil until tender.  Drain greens well but do not press or squeeze.

In a large frying pan over medium heat, warm the oil.  Add the garlic and chile.  Add the boiled greens and saute until all the water from the greens has evaporated.
