GRILLED TANDOORI CHICKEN
Ingredients:
1 cup plain nonfat yogurt
1/2 cup lemon juice
5 garlic cloves
1 green pepper
1 orange pepper
2 tablespoons paprika
1 teaspoon curry powder
1 teaspoon ground ginger
1/2 teaspoon red chili pepper flakes
6 each boneless, skinless, chicken breasts cut into 1-2 inch cubes
6 each wooden skewers, soaked in water for 15 minutes.
Directions:
- Combine all ingredients except chicken and peppers and blend in blender or food processor until smooth.
- Thread chicken pieces on skewers alternately with peppers.
- Place skewers in a shallow pan and cover with half of yogurt mixture and reserve the rest. Cover and chill 20 minutes.
- Remove skewers from yogurt marinade, and discard the marinade.
- Grill the skewers over medium-high heat on grill for 5 minutes per side.
- Serve with reserved yogurt sauce.
