Grilled Tandoori Chicken Recipe

GRILLED TANDOORI CHICKEN

Ingredients:

1 cup plain nonfat yogurt

1/2 cup lemon juice

5 garlic cloves

1 green pepper

1 orange pepper

2 tablespoons paprika

1 teaspoon curry powder

1 teaspoon ground ginger

1/2 teaspoon red chili pepper flakes

6 each boneless, skinless, chicken breasts cut into 1-2 inch cubes

6 each wooden skewers, soaked in water for 15 minutes.

Directions:

  1. Combine all ingredients except chicken and peppers and blend in blender or food processor until smooth.
  2. Thread chicken pieces on skewers alternately with peppers.
  3. Place skewers in a shallow pan and cover with half of yogurt mixture and reserve the rest.  Cover and chill 20 minutes.
  4. Remove skewers from yogurt marinade, and discard the marinade.
  5. Grill the skewers over medium-high heat on grill for 5 minutes per side.
  6. Serve with reserved yogurt sauce.
