Lettuce Bread

Ingredients:

1 ½ cup sifted flour

2 tsp. Baking powder

½ tsp. Soda

1/8 tsp. Ground mace

1/8 tsp. Ground ginger

½ cup splenda

½ cup sugar

½ cup melted butter

1 cup finely chopped lettuce

2 eggs

Directions:

Sift the four, baking powder, soda, and spices together.  Combine the sugar and butter in a bowl, then mix in flour mixture and lettuce.  Add the eggs, one at a time, beating well after each addition.  Turn into a greased 8 ½ x 4 ½ x 2 ½ inch loaf pan.  Bake at 350˚ for 55 minutes.  Cool in pan for 15 minutes.  Remove from pan and cool on a wire rack.
