Magic Mashed Potatoes 2
Ingredients:
2 cups cauliflower
3 peeled (or unpeeled) cooked potatoes
3 tablespoons canola oil or extra virgin olive oil, if using garlic
1 – 3 large garlic cloves, or as desired, minced (optional)
¼ cup lowfat or reduced fat milk
Salt and pepper to taste
Directions:
- Place cauliflower in one layer on 1 or 2 large, microwave-safe plates or shallow dishes. Sprinkle with water. Cover with 2 layers of wet paper towels.
- Microwave each batch on high setting, 4 – 6 minutes for fresh cauliflower or 8 – 10 minutes for frozen cauliflower, until soft but not mushy. Let cool slightly.
- Meanwhile, heat 2 teaspoons canola or olive oil in small, nonstick pan over very low heat. Add garlic and gently cook until soft, about 3 minutes.
- Add milk and heat until hot. Do not allow milk to come to boil.
- Place slightly cooled cauliflower and cooked potatoes into blender container or food processor bowl; carefully add milk or milk/garlic mixture and add ½ tablespoon oil. Cover with lid and puree until smooth. If puree is too dry or thick, pout blender on low speed and gradually add more oil, in small batches, until desired consistency is reached. Mixture should be fluffy.
- Season to taste with salt and pepper.
- If necessary, reheat in microwave to serve hot.
