Meatloaf

Ingredients:

1 – 1 ½ lb. lean ground beef or meat loaf mix

1 or 2 eggs

½ – ¾ cup oatmeal, cracker crumbs OR bread crumbs (about ½ cup per pound of meat)

½ cup liquid – tomato sauce, milk, bbq sauce, or catsup

¼ cup finely minced onion or 1 tsp. onion powder

1 tsp. parsley flakes

1/8 teaspoon black pepper

Optional: Microwave or sauté and drain chopped onions, carrots, celery and/or green pepper – About ½ cup per pound of meat can be added.

Directions:

  1. Preheat oven to 375º.
  2. Mix all ingredients together.
  3. Shape into 4 individual loaves in a shallow baking pan or into one 9” x 5” loaf pan.
  4. Bake until internal temperature reaches 165ºF, this will be about 25 minutes for small loaves or 45 – 50 minutes for a large loaf.
  5. If desired, catsup can be added to top of meatloaf during last few minutes of cooking.
