Oven-Fried Dill Chicken

Ingredients:

1½ cups bite-sized wheat, rice or corn square cereal, crushed into crumbs

3 tbsp. margarine

1 tsp. dried dill

¼ tsp. salt

1/8 tsp. pepper

2 pounds chicken pieces (drumsticks, thighs, or breasts)

Directions:

  1. Put cereal in a plastic bag and close tightly.  Use a rolling pin to crush the cereal.  Transfer the crumbs to waxed paper or a pie plate.
  2. In a small saucepan, combine the margarine, dill, salt and pepper.  Heat stirring until the margarine is melted.
  3. Brush the chicken pieces with the margarine mixture and roll in the cereal crumbs till chicken is coated.
  4. Place chicken, skin side up, in an ungreased shallow baking pan.  Bake at 375˚F for 50 minutes, or until tender and the juices run clear when pricked with a fork.

Serves 4.
