Oven-Fried Dill Chicken
Ingredients:
1½ cups bite-sized wheat, rice or corn square cereal, crushed into crumbs
3 tbsp. margarine
1 tsp. dried dill
¼ tsp. salt
1/8 tsp. pepper
2 pounds chicken pieces (drumsticks, thighs, or breasts)
Directions:
- Put cereal in a plastic bag and close tightly. Use a rolling pin to crush the cereal. Transfer the crumbs to waxed paper or a pie plate.
- In a small saucepan, combine the margarine, dill, salt and pepper. Heat stirring until the margarine is melted.
- Brush the chicken pieces with the margarine mixture and roll in the cereal crumbs till chicken is coated.
- Place chicken, skin side up, in an ungreased shallow baking pan. Bake at 375˚F for 50 minutes, or until tender and the juices run clear when pricked with a fork.
Serves 4.
