Grilled Starches
2 pounds Russet or purple potatoes, diced into 1-inch cubes
1 pound carrots, cut into ¾-inch lengths
1 pound pumpkin or other hard squash, peeled and cut into 1-inch cubes.
4 cloves garlic, minced.
Oregano, basil, rosemary or other spices as desired.
Olive oil
Salt and pepper
Create eight aluminum foil packets, brush with olive oil. Assemble equal amounts of vegetables and fill packets, adding garlic, salt and pepper. Seal packets and grill 30 minutes, or until carrots (the hardest vegetable) are tender.
