QUICK PUMPKIN OR SWEET POTATO PUDDING
Ingredients:
1 (3.4 oz) package no fat, no sugar instant vanilla pudding mix
1 (12 fluid oz) can low fat evaporated milk
1 (15 ounce) can pumpkin
1 teaspoon cinnamon
whipped cream
½ teaspoon vanilla
Directions:
- Beat pudding mix and milk according to package directions in large bowl.
- Refrigerate for 5 minutes.
- Add pumpkin and cinnamon.
- Mix well.
- Spoon into dessert dishes. Refrigerate for 10 minutes or until ready to serve.
- Top with whipped cream
