Sloppy Veggie Sandwiches
Ingredients:
1 cup chopped carrots
1 cup chopped celery
2/3 cup brown lentils, rinsed and drained
2/3 cup uncooked regular brown rice
½ cup chopped onion
2 tablespoons brown sugar
2 tablespoons prepared mustard
½ teaspoon salt
1/8 teaspoon cayenne pepper
1 clove garlic, minced
2 14-ounce cans vegetable or chicken broth
1 15-ounce can tomato sauce
1 tablespoon apple cider vinegar
8 whole wheat hamburger buns or French-style rolls, split and toasted
Directions:
- In a 3½ or 4-quart slow cooker combine carrots, celery, lentils, brown rice, onion, brown sugar, mustard, salt, cayenne pepper, and garlic. Stir in vegetable broth.
- Cover and cook on high-heat setting for 3 to 3½ hours. Stir in tomato sauce and vinegar. Cover and cook for 30 minutes more.
- Serve lentil mixture on toasted buns.
