Turkey Stock

1 turkey carcass, meat removed, bones broken
2 bay leaves
1 large sprig sage
1 sprig thyme
3-4 cloves garlic, sliced
1-2 dried small hot peppers
Water

Place turkey and aromatics in a large stock pot. Cover with cold water. Heat to boiling. Skim foam from the top. Cover and reduce heat to low. Let simmer for one hour.
 
Remove from heat. Filter stock through a sieve or cheesecloth into a clean container. Chill overnight. Skim fat from top. Use immediately or freeze for later use.
