Spicy Lamb Meatballs w/Tomato Au Jus

SPICY LAMB MEATBALLS W/TOMATO AU JUS

Ingredients:

1 pound ground lamb

1 egg white

1/2 pound turkey, ground, 99% fat free

1/4 cup bread crumbs

1/2 cup oats, quick cooking

1/4 cup onion, finely chopped

2 tablespoons garlic, minced

1/2 teaspoon ground allspice

1/2 teaspoon ground cumin

1/2 teaspoon salt

1/2 teaspoon black pepper

2 teaspoons olive oil

1/2 cup beef broth, fat free, reduced sodium canned

28 ounce diced tomatoes, canned

Directions:

1.  Combine first 9 ingredients and 1/4 teaspoon salt and mix well.  Shape into 50 little meatballs.

2.  Place onto lightly cooking oil sprayed baking sheet.  Bake at 350 degrees for 15 minutes.

3.  Meanwhile, heat oil in skillet and cook onion and garlic until soft.  Add broth, pepper and rest of salt.  Simmer 5 minutes until reduced.

4.  Add tomatoes and simmer on low heat for 15 minutes.

5.  Add meatballs to sauce and cook until heated, 5 minutes.
