3 pounds cubed beef, lamb or goat (Goat works really well.)
½ cup olive oil
¾ cup cider vinegar
½ cup very dry white wine
2 tsp. hot pepper flake
5 large cloves of garlic, crushed
1 tsp. salt
2 tbs. dried mint
¼ cup dried oregano
2 tbs. fresh rosemary
Mix ingredients and microwave or simmer briefly. Pour over meat and marinate for 2 days. Skewer and grill.
