Spinach or Swiss Chard Pesto

SPINACH OR SWISS CHARD PESTO

Ingredients:

2 cups fresh spinach or Swiss chard     ½ cup fresh basil leaves

1-2 garlic cloves                                  ¼ cup Parmesan/Romano cheese

1 Tablespoon lemon juice                      ¼ cup virgin olive oil

1/3 cup walnuts

Directions:

  1. If using Swiss chard, trim out the larger center vein, and steam leaves for 3-4 minutes.  If Spinach is old, you may want to steam leaves a little.  If it is young spinach, use fresh, don’t cook first!
  2. Combine all ingredients in a food processor or blender and process until smooth.
  3. Season with salt and pepper as desired.
  4. Makes about 1 cup.
