Squash Biscuits

Ingredients:

1 cup cooked winter squash, pureed

3 tablespoons soft margarine

2 tablespoons sugar

1 ½ cup all purpose flour

½ cup whole wheat flour

4 teaspoon baking powder

Directions:

  1. Preheat oven to 375ºF.
  2. In a large bowl, combine squash, sugar, and margarine.
  3. Mix the dry ingredients in another bowl.
  4. Add the dry mixture to the squash mixture and stir just until they make a dough.
  5. Roll the dough out on a floured board to about ½ inch thickness.
  6. Cut out biscuits with a floured biscuit cutter and place on a greased baking sheet.  (Brush tops with additional margarine if desired.)
  7. Bake about 20 minutes until tops are lightly browned.
