STRAWBERRY MOZZARELLA SALAD
Ingredients:
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper
3 cups romaine lettuce or greens mixture torn into bite size pieces
8 ounces strawberries, sliced
2 ounces mozzarella cheese, low moisture part skim, small cubes
1/4 cup fresh basil leaves, chopped
3 tablespoons parmesan cheese, grated
Directions:
1. Whisk together oil, vinegar, salt and pepper.
2. Mix together rest of ingredients except parmesan cheese.
3. Toss with oil mixture.
4. Sprinkle with parmesan cheese and toss lightly.
