STUFFED ONIONS
Ingredients:
4 yellow onions, peeled
2 cups mixed vegetables, fresh or leftovers
2 tablespoons garlic herb or your favorite seasonings
1/3 cup cheddar cheese, reduced fat and shredded
1/4 cup parmesan cheese, grated
1/4 cup bread crumbs, italian style
4 teaspoons margarine
Directions:
1. Slice off the top third of each onion and set aside; save tops.
2. Slice an “X” in the inner 2/3 of each onion. Using a spoon, remove the insides of the onion forming a bowl. Dice the inner section of the onions.
3. Combine the vegetables, diced onion, seasonings and cheddar cheese. Divide evenly into each onion.
4. Top each with bread crumbs and parmesan cheese. Dot with margarine.
5. Cover the onion with its top, wrap in 2 layers of foil. Place on grill or 400 degree F oven. Grill or bake 20-25 minutes, or until onions are tender.
