Sweet Potato Balls

Sweet Potato Balls

Ingredients:

2 large sweet potatoes, boiled or baked and peeled or a 1 pound can, drained well

1- 8 ounce can crushed sweetened pineapple

1 tablespoon margarine

¼ teaspoon salt

½ teaspoon cinnamon (optional)

1/3 cup cornflake crumbs or wheat germ

Directions:

  1. Preheat oven to 400°F.
  2. Grease a cookie sheet.
  3. Mash potatoes in a small mixing bowl.
  4. Drain crushed pineapple well, pressing out the juice.
  5. Add pineapple, margarine, salt and cinnamon to mashed sweet potato and mix well.
  6. Shape mixture into small balls and roll in cornflake crumbs or wheat germ.
  7. Arrange balls on a greased cookie sheet and bake for 30 minutes.
  8. Serve warm or cold.

Makes about 1½  dozen balls.
