Sweet Potato Balls
Ingredients:
2 large sweet potatoes, boiled or baked and peeled or a 1 pound can, drained well
1- 8 ounce can crushed sweetened pineapple
1 tablespoon margarine
¼ teaspoon salt
½ teaspoon cinnamon (optional)
1/3 cup cornflake crumbs or wheat germ
Directions:
- Preheat oven to 400°F.
- Grease a cookie sheet.
- Mash potatoes in a small mixing bowl.
- Drain crushed pineapple well, pressing out the juice.
- Add pineapple, margarine, salt and cinnamon to mashed sweet potato and mix well.
- Shape mixture into small balls and roll in cornflake crumbs or wheat germ.
- Arrange balls on a greased cookie sheet and bake for 30 minutes.
- Serve warm or cold.
Makes about 1½ dozen balls.
