Sweet Potato Burritos

Ingredients:

1 large sweet potato, baked and peeled

2/3 cups fat free refried beans

8 8” flour tortillas

6 oz. reduced fat cheddar cheese

1 cup white sweet corn kernels, raw

½ cup salsa (ready to serve)

½ cup fat free sour cream

Directions:

  1. Steam sweet potato until, about 8 minutes.  Set aside.
  2. Lightly oil or coat a large baking sheet with nonstick cooking spray and set aside.
  3. Preheat oven to 375º.
  4. Spread the refried beans evenly over each of 8 tortillas and sprinkle with the cheese.  Arrange the sweet potato, corn, and salsa evenly down the center of each.
  5. Roll up burrito-style and place seam side down on the baking sheet.  Bake until the cheese melts and the burritos are heated through, about 15 minutes.  Serve with sour cream
