Sweet Potato Phyllo Wraps

SWEET POTATO PHYLLO WRAPS

Ingredients:

3/4 cup mashed sweet potatoes

1 teaspoon vanilla

1/4 teaspoon cinnamon

1/4 teaspoon pumpkin pie spice

1/4 cup confectioners’ sugar

2 tablespoons granulated sugar

4 phyllo dough sheets

4 tablespoons chopped pecans

1 tablespoon maple syrup

Directions:

1.  Preheat oven to 375 degrees F.  Line baking sheet with parchment paper.

2.  Combine sweet potato, vanilla, spices and sugars.  Mix well.

3.  Unroll phyllo dough, keeping sheets in a stack.  Cover unused with waxed paper and slightly damp towel.

4.  Remove one sheet at a time.  Open sheet and spray edges with cooking spray.

5.  Spread 3 tablespoons sweet potato mixture across short end of dough.  Roll up.

6.  Cut roll in half.  Place on baking sheet.  Repeat with rest of ingredients.

7.  Lightly spray tops of rolls with cooking

spray.  Bake 15-20 minutes or until golden.

8.  Remove from oven.  Drizzle with maple syrup, sprinkle with pecans.
