Sweet Potato Salad

Ingredients:

2 large sweet potatoes

4 medium white or red potatoes

1/3 cup light mayonnaise

2 teaspoons honey mustard

1-2 tablespoons fresh chives, chopped

Dash of black pepper

Directions:

  1. Fill large saucepan half full of water.  Bring to a boil.
  2. Cut potatoes into ¾ inch chunks.  Add to boiling water, and cook until very tender (about 15 minutes).
  3. In a small bowl, mix together mayonnaise, mustard and chives.
  4. When potatoes are cooked, drain them in a colander, and place in a large bowl.
  5. Add mayonnaise mixture and stir.  Season to taste with black pepper.
