Parsnip Slaw

2 cups parsnip, peeled and shredded

1 apple, peeled, cored and shredded

1 leek, sliced very thin

1 Tbs. cider vinegar

2 Tbs. olive oil

1 Tbs. prepared mustard

ΒΌ cup bacon, chopped and fried until crispy.

Blanch parsnip briefly in boiling water, then chill in an ice water bath. Mix with apple and leek.

Whisk vinegar, oil and mustard. Stir into slaw. Add bacon. Refrigerate at least one hour and serve.
