Pumpkin Cake
2 cups granulated maple sugar, or 1¾ cups maple syrup
1 cup vegetable oil
4 large eggs
2 cups cake flour
2 tsp. baking soda
1 Tbs. ground cinnamon
1 tsp. ground ginger
½ tsp. ground nutmeg
1 tsp. baking powder
½ tsp. salt
2 cups pureed pumpkin
Preheat oven to 350 degrees.
Combine sugar, oil and eggs. Sift dry ingredients into a separate bowl. Add dry ingredients to the wet and beat well. Fold in pumpkin.
Pour batter into a greased and floured 9- by 13-inch cake pan. Bake for 40 to 50 minutes, or until an inserted toothpick comes out clean.
