Winter Slaw
1 small head red cabbage
2 large carrots
1 large beet
1 large apple, or ½ cup applesauce
½ cup maple syrup
½ cup cider vinegar
Dash vegetable oil
1 tsp. ground mustard
½ tsp. celery seed
½ tsp. salt.
Mix syrup, vinegar, oil and spices in a microwave-safe dish. Microwave for 1 minute, then let cool for an hour.
Finely shred or slice cabbage. Shred carrot. Peel and shred beet. Peel, core and finely dice apple. Mix ingredients. Toss with sauce, then refrigerate for at least 2 hours.
