Winter Squash Cakes w/Black Bean Salsa

WINTER SQUASH CAKES WITH BLACK BEAN SALSA

Winter Squash Cakes Ingredients:

2 cups winter squash, cooked and mashed

1 cup quinoa, cooked

1/2 cup corn kernels

2 tablespoons parsley, finely chopped

2 teaspoons allspice

salt and pepper to taste

Directions:

1. Combine ingredients and form into small cakes, about 1 1/2 inches        in diameter.  Place on greased baking sheet and bake at 350 degrees         for about 15 minutes until golden brown.

2. Serve with salsa.

Salsa Ingredients:

1 cup black beans, cooked

2 tablespoons red bell pepper, finely diced

2 tablespoons onion, finely diced

1/4 cup lime juice, freshly squeezed (1/2 lime)

1/4 teaspoon red pepper flakes

2 teaspoons honey

Directions:

1. Combine all ingredients.

2. Refrigerate at least 30 minutes to blend flavors.

3. Serve with Winter Squash cakes.

Makes 12 cakes, about 1 ½ inches in diameter
