Zucchini Pizza
Ingredients:
3½ cups coarsely grated zucchini (about 4 medium sized zucchini)
2 eggs, beaten
1/3 cup flour
½ grated parmesan cheese
¼ cup mozzarella cheese, grated
Salt, pepper, oregano to taste
8 ounces tomato sauce
Directions:
- Preheat oven to 350°F.
- Lightly salt the grated zucchini and let stand for 15 minutes.
- Squeeze out excess moisture.
- Combine zucchini with eggs, flour, parmesan cheese, ½ cup grated mozzarella cheese, salt and pepper.
- Spread mixture into greased 9 x 13 inch baking pan.
- Bake for 20-25 minutes or until surface is firm and dry.
- Cover crust with tomato sauce and the rest of the mozzarella cheese.
- Sprinkle with oregano
- Bake for 25 minutes.
10. Cut into 8 squares and serve.
