Zucchini Pizza

Ingredients:

3½ cups coarsely grated zucchini (about 4 medium sized zucchini)

2 eggs, beaten

1/3 cup flour

½ grated parmesan cheese

¼ cup mozzarella cheese, grated

Salt, pepper, oregano to taste

8 ounces tomato sauce

Directions:

  1. Preheat oven to 350°F.
  2. Lightly salt the grated zucchini and let stand for 15 minutes.
  3. Squeeze out excess moisture.
  4. Combine zucchini with eggs, flour, parmesan cheese, ½ cup grated mozzarella cheese, salt and pepper.
  5. Spread mixture into greased 9 x 13 inch baking pan.
  6. Bake for 20-25 minutes or until surface is firm and dry.
  7. Cover crust with tomato sauce and the rest of the mozzarella cheese.
  8. Sprinkle with oregano
  9. Bake for 25 minutes.

10. Cut into 8 squares and serve.
